Strawberry and Spinach Salad with Balsamic Vinaigrette

Never underestimate the simple meals! This one is a favorite if I can get my paws on some good strawberries.

I received some incredible strawberries in my Misfits Market box this week. Strawberries go bad so quickly I tend to try eating them right away. It seemed appropriate for a quick and delicious strawberry and spinach salad with an easy balsamic vinaigrette!

The nice thing about a meal like this is its diversity. You could dress it up to suit your needs easily. Add some nuts to it for extra protein and nutrients. If you are a craving meat top it off with shirmp or salmon. Or just serve it as a crowd pleasing side. Switch mozzarella to fetta for a tangy addition.

Strawberry Spinach Salad Balsamic Vinaigrette

Yields4 Servings

Salad
 1 cup Sliced strawberries
 3 cups Baby Spinach
 ¼ cup Thinly sliced sweet onion
 ¼ cup Shredded mozzarella
Dressing
 ¼ cup EVOO
 ¼ cup Aged Balsamic
 2 tsp Maple Syrup
 1 tbsp Dijon mustard
 1 Clove garlic, minced
 Salt and pepper to taste

Toss salad ingredients in a large bowl

Mix salad dressing ingredients in a small jar with a lid (or a blender). Shake to blend until well combined and drizzle over each salad!

The dressing lasts in the fridge for about a week.
