Easy Chickpea “Eggless” Salad

I had big plans for food prepping for a busy work week. Unfortunately when I woke up, I realized I needed a day to move slowly. Looking in my cupboards to get an idea of what I could quickly make to eat for the next couple of days, I saw a can of chickpeas and decided to try my hand at chickpea salad. Best decision ever! So satisfying and delicious. It’s even good on its own or over a salad!

Yields4 Servings

 1 Can of chickpeas rinsed and drained
 1 tbsp Nutritional yeast
 1 cup Lite Mayo
 1 tbsp Fresh lemon juice
 3 Scallions chopped small
 Salt and pepper to taste

Add all ingredients to a mixing bowl. Mash it all together with a fork or a potato masher and serve in a wrap, on toast, on salad or like I did on half an Dave's Killer Bread Everything Bagel with a slice of swiss cheese and some lettuce. It stored well in the fridge for 3-4 days.
